
- 1 small grated carrot
- 3 diced tomatoes
- 1⁄2 jalapeno pepper
- 2 T diced onion
- 1⁄4 C chopped cilantro
- 2 t juice of a fresh lime or lemon
- 6 romaine lettuce leaves
- 2 ripe avocados, cut into thin wedges
Mash the avocado in a bowl and add the pepper, onion, cilantro, lime or lemon. Spread this mix onto your lettuce leaves and sprinkle the grated carrot on top. wrap the leaves and enjoy! You may want to dip your wrap into hummus, soy sauce or salsa. Makes 4 servings.
