Turn the burner on medium high and watch as the water begins to boil.   In 30 seconds to one minute, turn the fish and 30 seconds to one minute later, quickly turn the burner to low and let the pan sit for a few minutes.  The fish will continue to heat and cook.  Never overcook it!
